Behind the Lines: Addition by subtraction - Celebrity Chef Rick Moonen takes unsustainable species off the menu

Rick Moonen, the chef-owner of RM Seafood in Las Vegas, has used his restaurants as platforms for his passion for conservation and sustainable fishing. Moonen's enthusiasm for the cause began when he operated some of New York's most iconic restaurants RM Seafood, Oceana and Molyvos. That passion even extends to the Fish Without A Doubt cookbook, which Moonen co-authored with Roy Finamore in 2008.

(May 4, 2010—Washington, DC): Warner Hanson Television is pleased to announce that its public television series Chefs A’ Field has won the prestigious 2010 James Beard Foundation Award in the category Broadcast Television Show, On Location. This is the 3rd James Beard Award the series has won over its four season run.

Rick Moonen’s Super Green Cuisine Dinner a recipe for success
The chef’s Super Green Cuisine Dinner was attended by a capacity crowd of more than 100 who were interested in the five-course sustainable meal with wine pairings. The dinner was help upstairs in the recently reopened fine-dining area, and guest speakers included Sheila Bowman of the Monterey Bay Aquarium’s Seafood Watch Program.

on The CBS Early Show!
Congratulations to Chef Rick Moonen who won this morning’s “Salmon Smack down” on The CBS Early Show (national audience of over 6 million viewers) the segment featured Chefs Paul Bartolotta, Rick Moonen and Bradley Ogden competing in a salmon cook-off. The segment kicked off our press efforts for Vegas Uncork’d Presented by Bon Appétit.
